Ingredients

  • ¾ cup salted butter, slightly softened
  • 1 ½ cups powdered sugar, sifted
  • 1 teaspoon pure vanilla extract
  • 7 ounces marshmallow fluff (about 198g), such as Jet-Puffed brand

Instructions

  1. Step 1: In the bowl of a stand mixer fitted with a wire whisk, or using a medium mixing bowl and a handheld mixer on high speed, beat the slightly softened butter until fluffy and pale yellow, about 3 minutes. Scrape down the sides of the bowl to ensure even mixing.
  2. Step 2: Lower the mixer speed to low and add the sifted powdered sugar half a cup at a time, beating well after each addition. Scrape down the sides after each addition. Once all sugar is added, increase speed to high and beat for 2½ to 3 minutes until the mixture is fluffy and well combined.
  3. Step 3: Reduce the mixer speed to medium and add the vanilla extract. Mix until no streaks of vanilla remain.
  4. Step 4: Add all the marshmallow fluff, scraping as much as possible from the container. Mix on medium speed just until incorporated. Then increase speed to high and beat for 3 to 4 minutes until the frosting is no longer sticky and is light and fluffy.
  5. Step 5: Store the frosting covered in the refrigerator until ready to use. Before frosting, let it sit at room temperature for a few minutes, then transfer to a piping bag and decorate your cupcakes.

Tips & Variations

  • For an extra fluffy texture, use slightly softened butter rather than room temperature butter.
  • Sift powdered sugar to avoid lumps in the frosting.
  • You can add a pinch of salt if you prefer a less sweet frosting.
  • Try adding a tablespoon of cocoa powder for a chocolate twist.

Storage

Store the frosting covered in an airtight container in the refrigerator for up to one week. You can freeze it for up to three months; thaw overnight in the refrigerator before using. Once thawed, beat it on high speed to restore its fluffy texture before frosting your desserts.
